1 cup dry barley, cooked till tender and cooled
1 can tuna, drained
½ cup sun dried tomatoes, chopped
½ cup olives, chopped
1 cup artichoke hearts, chopped
1 can chickpeas, drained
1 cup feta, crumbled
½ cup Italian dressing (more to taste)

 

Mix everything well and serve chilled or lukewarm. Can also be made with leftover rotisserie chicken.
